My husband has been in the field a lot lately, which means that nobody is around to help me eat the bananas, so they tend to go bad by the end of the week. Instead of tossing them out, I decided to use them to make banana bread! This was so filling, healthy, and delicious. And easy.
Chocolate Chip Banana Bread (recipe here)
I decided to use this recipe because I had all of the ingredients on hand, so it was super convenient. In addition to the ingredients seen above - which are the ingredients the recipe called for - I also decided at the last minute to add in about a cup of wheat germ, to make it even healthier.
It was seriously too easy. All you do is mix up the wet ingredients, add the dry ingredients, add the flour bit by bit, then stir in the chocolate chips. Pop that baby in the oven for about an hour, and enjoy breakfast for the next week. I stored mine in the fridge so that it would last the whole week. On Friday, it tasted just as moist and delicious as it did on Monday. As someone who likes to take breakfast on the go, this was awesome.
By the time I finished this loaf, I had another batch of brown bananas ready for the next week!! YUM.
